This is partly a hold-the-link-for-me post, so I can find it again:
I want to try this "instant homemade" macaroni and cheese. Because I can make it low enough sodium for me, and I can make just enough for one serving, no eating gluey leftover mac and cheese all week. (I wonder if canned evaporated milk would work? I don't usually keep 1% on hand and I suspect the bit of fat in it is necessary. Then again, I could experiment by adding a dot of butter to it....
One of those microwave-mug-cake things: butterbeer cake. I don't know. It might be gross. Then again, it's not one that uses a cake mix. (I've seen ones where you mix an angel food cake mix and another flavor, and then use that for mug cakes - the idea being the dry eggs are in the angel food cake.) My big problem with this is it calls for a tiny bit of cream soda (I'm guessing that particular ingredient is necessary for flavor and "lift") and I don't generally keep carbonated drinks around, and either I'd have to drink the rest of it, make more cakes, or throw it out....also I don't think you can buy just ONE can of cream soda....
And I actually made pumpkin chocolate chip muffins this weekend. They were good, but I followed the advice to up the chocolate chips (from 1/2 cup to 3/4) and it was too much chocolate, not enough pumpkin. (Also, I think the mini chips might have been better in this). It actually made 16 muffins for me so I'm guessing their "small" muffin is bigger than what I think is a "small" muffin.
I have about a cup of pumpkin left and if I get the energy this week I might make pumpkin chocolate chip cookies to bring in to the department.

the real cheap caned variety of sodas have a orange cream or just a cream soda that might work for you. Our local grocery has them by the can.
