I heated up and ate the last of the stir fry I made last week for lunch today (I got out of class at 10:45 and I have a 5 pm meeting with a student, so heck yes I went home for lunch).
I have to say stir fry - well, good stir fry, I've made some that came out a real "dog's breakfast" - is probably one of the simplest ways to eat. You have vegetables. And you have protein. And you have starch/filler in the form of either rice or noodles.
And this stir fry kept over very well - I wound up getting four good-sized (for me at least) servings out of a "for two" amount of stir fry.
So this is definitely a recipe I plan to make again. And I may scan through my cookbooks and backlog of cooking magazines for other good stir fry ideas. (I should try sukiyaki; I'd probably like that too)
