"crazy easy" baked homemade egg rolls. (Except I think I'd buy fresh mushrooms and cook them down a bit, rather than use canned).
This probably makes more than I could eat up. But I wonder, maybe the uncooked egg rolls would freeze well...you could make a batch and pop them in the freezer and take out what you want. I may have to try that one of these weekends.

Mmm, those sound good. And I bet they would freeze well--I get teeny frozen egg rolls for bento sometimes. I'd love to make and flavor them on my own.
