Interestingly enough...

I commented about paneer yesterday in regards to that "omnivore's 100" list?

Angry Chicken has a how-to. It looks very easy.

The only problem is, I have no source for low-heat pasteurized whole milk (or raw milk, which might be better, but the idea of which kind of squicks me out). So unless I find the health-food stores have some kind of low-heat pasteurized stuff, no paneer for me.

what y ou want is any milk that isn't "ultra-pasteurized." that is darn near boiled, and the proteins in it won't coagulate. any regular milk will work, otherwise. a friend recently g ot a cheese book, and i'm tempted to make mozzarella.
