Started my Christmas knitting last night - did the first few rows on the blue socks I'm making for my mom.
I also made up a recipe last night - it's nothing all that special but I thought I'd share it because it was pretty good.
Oven-fried honey-pecan chicken.
Take about 1/3 cup flour and 2/3 cup breadcrumbs and mix them. Add 1/4 to 1/2 cup chipped pecans (the tiny little pieces they sell for making cookies) and a couple teaspoons of seasoned salt. Optional - add a couple tablespoons sesame seeds.
Mix all this up either in a plastic zip-top bag or a bowl.
Take your chicken and dredge it once in this mixture, then in 1/2 cup milk plus one beaten egg, then in the mixture again. Put in a slightly oiled pan (I used a glass pie plate) and drizzle a little oil over the top (I used the "light" olive oil, which is what I use for most cooking where I don't want to impart a strong oil flavor). Bake for about 50 minutes (for medium sized boneless breasts) in a 400* oven. Turn halfway through cooking.
At the table, drizzle with honey, if desired.
I was surprised how well this turned out for what was basically an "I'll throw these things together" recipe. I wanted to make honey-pecan chicken - there was a restaurant where I used to live that made a very good honey-pecan chicken except theirs was grilled, and the honey-pecan thing was a sauce put over after cooking. I couldn't find anything comparable in any of the cookbooks I looked in, so I just went with what I know well how to do - oven fry chicken. It actually gets a nice crunchy outside on it, which surprised me a little.
